These are for breakfast tomorrow. Reheated and served with cream cheese and a drizzle of honey.
1 1/4 cups of shaved coconut, lightly toasted
3 cups SR flour
150g brown sugar
150g butter
2 medium sized bananas, mashed
1 270g can coconut cream
2 tsp vanilla essence
honeycomb
Place flour, sugar and butter in processor and pulse until combined.
Place in a large bowl with coconut and add combined bananas, cream and vanilla.
Sir until mixture is just combined. The mixture will be quite thick.
Spoon into mini loaf shaped liners and bake for 15 minutes at 180C. Cover with foil and bake for another 15 minutes. Remove from oven and make a slight cut in the top, and place a small piece of honeycomb in. They can be eaten warm, straight from the oven, or reheated later.
Makes 8 mini loaves.
